As of lately, I’ve been advocating for a healthier lifestyle for us. So I’ve been trying to mix together different recipes from Pintrest to see which ones work for us! I’ll tell you a secret, I hate the idea of meal prepping. It’s just a lot for me. And I can’t commit to eating the same thing for 7 days straight. I mean come on. I married a woman so I didn’t have to do anything straight ever again. Typically, I only use the recommended cook times that are listed on the Pintrest recipe instead of the actual recipe because I like mixing and matching to create my own finished product. So here is how I made my #BreffisCasserole!
What you’ll need:
4-5 Small Potatoes
1 Green Bell Pepper
½ Pack of Smoked Sausage
9 Large Eggs
1 cup of Cheese (I used Colby Jack because it’s stringy and delicious)
Desired amount of Salt & Pepper
Sweet Sticky Sauce (I used this to soak my bell peppers and sausage in to make the casserole sweet)
1 tbsp light brown sugar
1 tsp lemon juice
¼ cup of syrup
¼ cup of honey
Desired amount of red/cayenne pepper
Slice your potatoes into thin enough slices to fully cook all the way through. Pop them in your oven for about 10-15 on 350 degrees with a drizzle olive oil.
Dice and saute your bell peppers and sausage.
Combine your ingredients for the sweet sticky sauce in a small saucepan. Add in your diced bell peppers and smoked sausages. Let it simmer for 5-8 minutes.
Whisk your eggs, add in the cheese and your desired amount of S&P.
Layer your potatoes in your baking dish (I suggest lining it with aluminum foil for easier clean up, but hey, who am I?)
Scoop out your bell pepper sausage mix and evenly coat the potato slices.
Pour your egg mixture over the entire dish.
Cook time: 15-20 minutes on 350 degrees
Yield: 12 2” blocks of delicious delectables
